From Our Family to Yours
212 Pizza Co is a small mom-and-pop shop in Castle Rock, Colorado, owned by the Crooks Family. You’ll see “Mom,” aka Robin, at the shop a lot, and if you’re lucky, you may even catch “Grandma,” “Grandpa,” and the “kids” lending a helping hand on those busy nights.
As a family, we love the opportunity to serve our neighbors, friends, and visitors with the same quality of ingredients we serve our own family.
That philosophy guides the choices we make at 212—from the ingredients we use and the food we make in-house to the local businesses we choose to support. We care about where our food comes from, how it’s made, and the community we’re fortunate to serve.
House-Made Sourdough
One of the newest ways we’re putting that philosophy into practice is through our house-made sourdough.
Our sourdough is naturally fermented and made right here at 212 with simple ingredients, time, and care. Giving the dough time to ferment naturally allows it to develop the flavor and texture that make sourdough so special.
It’s a process that can’t be rushed—and that’s exactly what we love about it.
You’ll find our sourdough in our house-made sourdough pizza crust and other creations from our kitchen. It’s another opportunity for us to make more from scratch, keep ingredients simple, and put a little extra care into what we serve.
Local Supporting Local
Being a small business ourselves, we know how much it means when someone makes the choice to shop, eat, and support local. We try to do the same.
We start right here at home, supporting fellow Castle Rock businesses including Salt Meat Market, Kim’s Sauces, and The Cooperative Bakery.
Beyond Castle Rock, we’re proud to work with Colorado food producers including Local Hive, Ardent Mills, Red Bird, Honey Smoked Fish Company, and Sweet Escapes.
That commitment extends to what we pour, too. Our Colorado wine and cider selections include Colterris Winery, Plum Creek Heritage Wines, Old Mine Cider, and Snow Capped Cider. We also support Colorado breweries including Eddyline, Pikes Peak, Lone Tree Brewing, and Sole Craft.
When you choose 212 Pizza Co, your support reaches beyond our family’s small business. It allows us to turn around and support other local families, makers, bakers, growers, brewers, and producers throughout our community and our state.
We believe great food doesn’t need to be complicated.
We pay attention to what goes into the products we use and thoughtfully choose ingredients that meet the standards we care about. Whenever possible, we seek out organic, non-GMO, nitrate-free, antibiotic-free, and rBST-free options.
Our traditional mozzarella is made without fillers, preservatives, cellulose, artificial ingredients, or whiteners. The flour we use is unbleached and unbromated, keeping two of the most important ingredients in our pizza simple.
Our sausage and meatballs are our own 212 recipes, created in collaboration with Castle Rock’s Salt Meat Market and made specifically for us. They’re not off-the-shelf products—they’re unique to 212 Pizza Co.
That same approach carries throughout our kitchen—from our sauces and toppings to the things we make in-house. We want to know what’s in the food we’re serving and feel good about putting it on the table.
